Angie's Pineapple Cookies

Preheat oven 350
Makes about 3 1/2 dozen

Ingredients

1 package 8 oz cream cheese softened
1 large egg
1/2 cup ( 1 stick) unsalted butter
1 package moist deluxe pineapple supreme cake mix
1 tablespoon oil
1 teaspoon vanilla extract
2/3 cup packed dark brown sugar
1 jar (10 oz) maraschino cherries drained and dried and cut in half

In a large bowl, with mixer on medium speed, beat cream cheese, egg and butter two (2) minutes or until well blended.

Reduce speed to medium-low and slowly add the unprepared cake mix, oil, vanilla. It will be a very stiff dough but will beat smooth.
Refrigerate for 30 minutes or longer.

Preheat oven to 350 F and lightly spray two (2) cookies sheets with non stick cooking spray. (I always use parchment paper for cookies and feel it is worth the extra money)

Spread the brown sugar in a plate.
Shape dough into 1" balls and roll in brown sugar.
Place balls 2 inches apart on cookie sheet and lightly press 1 cherry half, cut side down, into center of each ball.

Bake 13-15 minutes or until cookies are firm around the edges. Cool in pan 2 minutes and then transfer to cooling rack to cool completely.

(these look just like a slice of pineapple with a cherry in the middle and taste like pineapple upside down cake)
