Provance Apple Cake

Preheat oven 350f
You need one 9x9 pan greased

2 cups diced apples (peeled)
1 cup granulated sugar
1 beaten egg
1/4 cup crisco vegetable oil
1 cup all purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon vanilla
1/2 cup chopped nuts
1/3 cup raisins

Pour sugar over diced apples and let it sit at least 30 minutes until juice is drawn from apples.
Add the beaten egg to the oil and mix togther
add the oil and egg to the apples

Sift together the dry ingredients and add to the apples and stir.
stir in the nuts and raisins
pour into prepared pan and bake in 350 oven for 25-30 minutes.
Serve with a dollop of whipped cream or just as it is.
Double it make a 9x13

This is very moist cake. This family recipe has been passed down and it is all time favorite.
