Banana Cupcakes

makes 12 Preheat oven 350f

Sift together and set aside

1 1/4 c flour
1 1/2 teas baking powder
1/2 teas baking soda
1/4 teas sea salt


Mix together and set aside

2 very ripe bananas, Mash with a fork
1/2 c sour cream (not lowfat)
1 1/2 teaspoon vanilla
1/2 teaspoon banana flavoring

Beat together until light
3/4 c sugar
1/2 c (one stick butter room temperature

Add one large egg and beat well

Starting with flour add 1/3 to sugar mixture and stir to combine
add 1/2 of the banana mixture to sugar and stir
add another 1/3 of flour and mix
add the rest of banana and mix
add rest of the flour last ..mix until just combined

Fill cupcake pan with liners 2/3 full around 1/4 c batter

Bake 350 about 17-20 min.


I frosted these with chocolate buttercream.
