Pumpkin Cupcakes

Preheat oven 350
Makes 12

Sift together
1 cup flour
1 teaspoon pumpkin pie spice or (make your own ..1 teaspoon Cinnamon, 1/4 teaspoon ginger. 1/8 teaspoon nutmeg, a dash of cloves)
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon sea salt
set aside

beat together

1 c pumpkin
1/2 c white sugar
1/2 c brown sugar
1/2 c oil
2 beaten eggs

add dry flour mixture and stir by hand

Fill cupcake 2/3 full (about 1/4 cup)

Bake 15-18 min

I frosted these with cream cheese frosting and sprinkled with chopped walnuts.
