Crock pot roasted garlic potatoes

Category: Side dish

Ingredients:

3 pounds, baby potatoes
1/2 onion, finely chopped
1 (14.5-ounce) can chicken broth
1/4 cup olive oil**
3 garlic cloves, minced
3 tablespoons chopped fresh parsley leaves***
1/2 teaspoon salt
1/2 teaspoon black pepper



** Melted butter may be substituted.

*** If unable to find fresh herbs, substitute 1 tablespoon of dried basil or oregano.


Preparation:

Preheat slow cooker on high heat.

Wash and scrub potatoes. Place potatoes and onions in slow cooker. Cover with enough chicken broth to cover potatoes. Cover with lid and cook on high heat for 3 hours or until tender. Drain liquid from potatoes


If you want to make in the oven, cut them in half or quarters, add seasonings, toss in clarified butter, and baked them at a high heat until they got crispy.
