Italian Sausage Soup

1 tsp. olive oil
1 lb. Italian sausage, cut into 1/4-inch-thick slices
1 onion, chopped
1/2 large green or red pepper chopped
2 cloves garlic, minced
2 cans (14 oz. each) fat-free reduced-sodium chicken broth
1 soup can water (or more chicken broth)
1 can (15 oz.) cannellini beans, rinsed
1 can (14.5 oz.) diced or stewed tomatoes, undrained
1 cup rotini pasta, uncooked
1-1/2 cups baby spinach leaves
1/2 cup KRAFT 2% Milk Shredded Mozzarella Cheese
Saltine crackers
make it

HEAT oil in large saucepan on medium-high heat. Add sausage, onions and garlic; cook 10 min. or until sausage is done, stirring frequently.

ADD next 4 ingredients. Bring to boil. Stir in pasta; cook on medium heat 8 min. or until tender. Remove from heat.

STIR in spinach; cover. Let stand 5 min. Top with cheese. Serve with crackers.

For heat, use hot sausage or add a little ground red pepper, cayenne or chipotle
