Tomato Carrot Soup

1 onion, diced
1 tablespoon olive oil
1/2 lb carrot, peeled and diced
1/2 teaspoon curry powder
1 teaspoon balsamic vinegar
1/2 teaspoon garlic pd
1 teaspoon brown sugar or more if you want it sweeter
1 (28 ounce) can chopped tomatoes (salt free so you can control the salt)
3 1/2 cups low sodium chicken broth
6 tablespoons fresh basil, chopped
salt and pepper


Directions:

Fry diced onion in oil until onion is oft and begins to brown.

Add carrots, peeled and diced, and curry powder.

Add chopped tomatoes and chicken broth. Bring to boil and simmer until everything is tender. Add 2 tablespoons fresh chopped basil, and salt and pepper to taste. Simmer one minute.

Puree soup, then stir in 4 more tablespoons chopped basil.
You can add some half and half or cream if you want a creamy soup.
Add some small frozen cheese raviolis for a treat.
