Irish Soda Bread

4 cups flour
4 Teaspoons baking powder
1 cup sugar
1/2 Teaspoon salt
1 Teaspoon caraway seeds
1 1/2 cup dried currants
2 Eggs, beaten
1 cup Irish butter, melted * note
1 cup milk

Method:

Preheat oven to 350 degrees. Lightly grease a loaf pan. Place currants and caraway seeds in a big bowl. Sift together flour, baking soda, sugar and salt. Pour sifted mixture over currants. Add the Irish butter, eggs and milk; mix well. Mold dough into a loaf shape on a floured board, then place on greased pan and bake for one hour, or until bread tests done.

*note Irish butter has more butterfat and has a richer, almost cheesy, character. It tends to be saltier and less bland than American butters but is worth the little extra in cost.
