Fresh Corn and Summer Squash Tacos :)

3 tablespoons olive oil
1/2 red onion, diced
2 cups summer squash (zucchini and yellow squash), sliced
3 ears fresh corn kernels
1 red chili, thinly sliced
1 jalapeno, thinly sliced
1 cup cherry tomatoes, halved
kosher salt to taste
8 corn tortillas
fresh cilantro, lime wedges and avocado slices for garnish


Instructions
1 In a heavy pan over medium-high heat, add the olive oil. Add the red onion and let it cook until softened, about 5 minutes. Add the squash and cook another 2 minutes.
2 When the squash has gotten a little browned, add the corn and barely cook until tender, 2 minutes. Add the chilis and stir. Season to taste with kosher salt and then pull off the heat.
3 Mix with the cherry tomatoes and check for seasoning.
4 Heat the corn tortillas in a dry pan until hot and soft. Spoon the corn mixture over the tortillas. Then add the cherry tomatoes and avocado chunks. Squeeze a lime wedge over the tacos and add some fresh cilantro and serve immediately.
