Low Carb Perogie Lasagne

SERVES 8

2 head Cauliflower chopped
1 block low fat aged cheddar, must be old
3 chopped onion sauteed to a golden dark brown
1/2 pound diced up low sodium bacon or smoked turkey bacon
in 1 c low sodium low cal margarine
low fat sour cream
steamed cabbage leaves

*****************************************
1. steam the cauliflower
2. at the same time, prepare and saute those onions and low sodium bacon with the margarine

3. grate the block of cheese then add to finished cauliflower and mix and mash well.

4. layer cauliflower mixture, then add a layer of sauteed onions then top that with steamed cabbage leaves , repeat until your baking dish is full. (your last layer should be cabbage leaves tucked into the sides of the pan)

5. Pour remaining sauteed onion/bacon mixture on top and grate some old cheddar on top

Bake at 350 for 30 minutes until top is golden brown

OPTIONAL top with fat free sour cream
