~Cranberry Sauce Whoopie Pies!
When I realized how teeny tiny my ingredient list is, in comparison to traditional Whoopie Pies, I almost felt guilty, then I took a bite, and I felt better! :)
In my opinion..cooking and baking is one of the only aspects of life where the quality of our result, doesn't have to be directly related to the effort we put into it! And here's your proof!
These may look Red Velvet-ish, however..after only one bite the intense cranberry flavor leaves no doubt! :)
Check out how simple these are to make..
What you'll need:
1 box of white cake mix
1 can of Whole Berry Cranberry Sauce
Up close & personal! :)
Chocolate frosting
Powdered sugar
A few drops of red food coloring
Directions:
In a medium bowl, combine the Cranberry Sauce with the Cake Mix. This takes a little muscle to get it all combined..and will feel almost like bubble gum when it's ready!
Once the batter is well combined, give your arms a rest, and mix in the red food coloring!
By the time the color is to your liking, you will have officially burned off at least 2 cookies...Whoopieee! ;)
Roll small spoonfuls of the batter into powdered sugar. The second it touches the sugar, all the stickiness goes away, so roll it in there good!
Lightly press to flatten them just a little, place onto a parchment lined baking sheet..a couple of inches apart. Bake them at 350 degrees for about 12-15 minutes, until they are firm, and crackly.
Let cool, and take 2 like sized cookies and sandwich them together with the frosting!
That's it..Whoopieeeee! :)

*HINT* The food coloring is necessary for vibrancy..keep adding it to the batter, until your eyes are happy!
