Easy Cheap Healthy Curried Lentil Soup/Stew

This recipe works with variable amounts, changing out vegetables, increased or decreased spices, as long as you don't burn it.
Best and easiest cool weather supper (cheap too):
couple tbsp olive oil in large heavy pot, heat.
Add a couple sliced carrots (don't peel them),one minced onion (I used my "alligator chopper"), about 2 heaping tbsp each grated or crushed garlic and ginger, about a quarter cup of curry powder.
Stir over heat and love the aroma.
Add a little water as it gets pasty, to keep it from sticking. Stir while adding the water.
Put in a package of lentils, enough water to cover and then some, maybe a quart or more.
Bring to a boil, turn down to a slow simmer and cover. After 40 minutes or so, check to make sure there is still enough water.
Add water if it is too thick.
Add coarsely grated pepper and iodized sea salt (or regular pepper and salt) to taste. Enjoy.
Low fat, high protein, high fiber, medium carbs, lots of antiinflammatories (garlic, ginger and curry are all great for that). Wow.
