Mediterranean Sauce for Salmon

Ingredients

8 cloves Garlic, minced
2 tsp. sea salt
1 tsp. dry leaf oregano
1 tsp. black pepper
1/2 cup carrot, peeled and quartered
1/4 cup diced red pepper
Zest of 3 lemons
4 oz. fresh lemon juice
1 bunch flat leaf parsley
1 cup extra virgin olive oil

Instructions

Combine all ingredients, other than the parsley, in a food processor and pulse chop until all ingredients are approximately 1/8 inch in size.
Add parsley and pulse chop until well-pureed.
Add olive oil to sauce and blend quickly.
Preheat sauce in a large, covered pan, over medium heat until it bubbles steadily, but not violently.
Add salmon, or any other fish, to the preheated sauce and cook, turning halfway through cooking (approximate total cooking time for salmon is 15 minutes).
Top finished salmon with drained sauce mixture.

Serves up to 8, or up to 3 pounds of fish.
