Tortas Ahogadas ( Drowned Sandwich )

Sandwich Ingredients:
2-lbs Roast Beef,or pork Shoulder butt (Shredded)
1-large onion (sliced)
2-cloves of garlic
2-Tblspns of cumin
4-Tblspns of chili powder
2-Tblspns of Mexican oregano (dried)
Bread: Bolillo, or Bilote bread (The crust of this bread can handle the Sauce bath when submerged without falling apart or becoming too soggy)
Sauce bath ingredients:
1-ib of stewed tomatoes (diced, and keep stew for sauce)
7-cayenne, or Serrano peppers (Stew with tomatoes)
1-16 oz can of tomato sauce
2 cloves of garlic
1-Tblspn chili powder
1/4 cup of fresh cilantro (finely chopped)
1-tspn garlic salt
2 Tblspns lime juice
1-cup of beef broth
Garnish:
2-avocados (sliced)
1-large red onion (sliced)
lemons or limes
1-can of black beans (mashed)
Meat prep:
Boil beef in a large deep pan of water, (enough water to cover meat), for 3 hours at medium heat.(2 1/2 hours for pork)adding onion, garlic, cumin, oregano, and chili powder in the last 30 min. of boil time...
Preheat oven to 350 F. and drain meat and ingredients and transfer to baking pan.
Place in oven covered and cook for 40 minutes longer.While meat is in the oven prepare sauce bath.
Sauce bath:
Place sauce ingredients in sauce pan (pan should be big enough to submerge whole sandwich),over medium heat for 45 minutes.The sauce needs to be thin, almost like water,(ad water if needed, or ad broth from drained meat)
Sandwich prep:
Remove meat from oven and shred with forks.Slice bread on the side but not all the way through to form a boat to hold ingredients so that nothing will fall out of the sandwich when submerged in sauce bath.
Spread mashed beans onto bottom half of sandwich, with avocado slices, (grated cheese optional), then add shredded meat. Now with a pait of tongs dip whole sandwich into the sauce bath, completely submerged, and then plate.This is a messy but delicoius sandwich!Garnish with sliced red onions,and avocado,,,then sqeeze lime juice over sandwich!
my fiancee live in Guadalajara where this sandwich originated, and she introduced me to this awesome sandwich while i was there! It is one of the most popular dishes in Guadalajara, and when you sink your teeth into this one you will know why!!! Enjoy!!!
