2-Layer Lasagna

1 lb lean ground beef
14 1/2 oz can diced tomatoes
1 cup finely chopped red onion
i cup sliced fresh mushrooms
1 teaspoon garlic powder
6 oven-ready lasagna
14 oz can tomato sauce
16 oz cottage cheese, small curd
2 cups reduced-fat mozzarella cheese
1/4 cup Parmesan cheese
1 teaspoon Italian seasoning

Heat oven to 350
Brown ground beef and pour off grease before adding the diced tomatoes, chopped onions, mushrooms, garlic powder and italian seasoning. Salt and Pepper if you like!
Cook over medium heat for about 10 minutes.
In a 13 by 9 by 2 pan or baking dish, pour some tomato sauce to just cover the bottom of the pan,then place three lasagna in the tomato sauce, top with one half of the cottage cheese, the beef mixture and the mozzarella cheese. Repeat the layers of each one more time ending with mozzarella cheese.
Sprinkle Parmesan cheese on top.
Bake in 350 oven for 1 hour
Will make 6 servings at 395 per serving or 9 servings at 265 per serving
