Ingredients

4 medium sized sweet onions (Vidalia)
2 cups Cider Vinegar
1 cup white sugar
1 teaspoon kosher salt
1/2 teaspoon white pepper
1/4 teaspoon garlic powder

Instructions

Put all ingredients except onions into a sauce pot over medium high heat. Bring just to a boil, stirring often.

As the cider is coming to a boil, peel onions and slice into rings. Separate rings.

When mixture comes to a boil remove from heat and add in onions. Stir and allow to rest for five minutes, or until the onions have wilted down. Stir again and let stand for another five minutes.

Put in a glass or plastic container, cover, and refrigerate until well chilled and ready
to serve.
