Makes about 2 dozen cookies

1 pound margarine
1 teaspoon vanilla extract
2 cups sugar
2 cups chopped pecans (optional)
4 cups flour

Mix all ingredients, blending well. Drop by the spoonful onto a cookie sheet, then flatten slightly with the bottom of a glass jar. (I use a heavy coffee mug) Bake at 350 degrees F for about 12 minutes or until done.

Note: These are like those wonderful Danish cookies you can buy in the pretty tins at Christmastime.
