Italian Sausage-Stuffed Mushrooms

Makes 30-ish depending on mushroom size
About 2 pounds medium button mushrooms
1 pkg. (4 sausages) Italian links with casings removed
2 cups vegan cream cheese, at room temperature
1/4 cup finely minced onion
Wipe the mushrooms, remove stems but save.
Finely chop the mushroom stems. Then mix together with the sausage, cream cheese, and onion. Use clean hands for the best mix.
Fill mushroom cups to the top, allowing a slight dome but not so much that it will fall over when cooking.
Place on a buttered baking sheet and cook until completely browned, making sure all pink is gone from the meat. Cooking time varies, but usually 15-20 minutes will do.
Serve immediately. A warm marinara sauce makes a nice dip for variation.
Note: Do not brown the sausage before stuffing the mushrooms.
