Southern Style Green Beans

Serves 4 to 6

2 – 4 slices thick bacon
1/2 medium onion, chopped
1 Tbsp. butter
About a half-cup brown sugar
2 cans French style, or cut green beans, drained
Salt & Pepper

First, cut the bacon into very thin strips, cutting sideways across the bacon. Then fry in a heavy skillet for a few minutes. Add the chopped onion and cook until it’s tender and the bacon is completely done. I don’t let it crisp, but it does not affect the recipe if you prefer. Drain off some of the bacon fat if you like, but keep at least a couple of tablespoons. Add the butter, then the drained green beans, and season with just a tiny pinch of salt. I don’t pepper mine, but if you like pepper now’s the time to add it too. Then fry long enough to heat through and blend all the flavors. Add the brown sugar last and cook, stirring to dissolve. Serve warm.
