Pork & Bean Salad

2 cans pork & beans
1/2 cup minced onion
1/4 cup chopped celery
2 Tbsp sweet pickle relish
Mayonnaise, as desired (about 3/4 cup)

Mix everything together and chill overnight before serving. You can serve it straight-up, or spoon onto a lettuce leaf.

When I first saw this at her house, I thought that was too weird, but Bobbye convinced me to try it before I knock it, and it’s surprisingly good... if you like pork & beans. :)
