Old Style Meatloaf

Serves 6 - 8
Makes 1 loaf
2 pounds lean ground beef
OR 1 pound beef + 1 pound ground pork
1 6-oz. can tomato paste
1 tomato paste can of water, not quite to the rim
1 beaten egg
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 garlic bud, minced
salt & pepper to taste
about 1/2 cup catsup
Mix everything but the catsup in a large mixing bowl. It really does mix better if you use your hands to squeeze it all together.
Place into a greased loaf pan, pressing to form. Place in 350 degree oven and bake for an hour. Spread the top with catsup and return to oven to bake another 10 minutes or so.
After removing from oven, allow to set five minutes before serving. To serve, carefully remove onto serving platter and slice into equally-sized slices. You may top with a tomato sauce or brown gravy if desired.
Mama's favorite things to go with meatloaf were mashed potatoes with gravy made from mushroom soup, and buttered corn.
