New Potato Hash

The recipe is for one, but two with small appetites could share easily.
2 small new potatoes (boiled until done but not mushy – leftovers are great!)
1 avocado
2 or 3 onioin slices
1 or 2 button mushrooms, sliced
2 slices bacon, cooked and crumbled
1 sliced green onion, green part only
Garlic Powder
Butter
Sour Cream for garnish
Grated cheese, I used Colby-Jack but any would thearhetically work
Cook the potatoes al dante, they will finish cooking while you're preparing the plate.
While the potatoes are cooking you'll have plenty of time to continue... Cook the bacon (I use the microwave).
Sauté the onion and mushroom slices in butter and/or bacon drippings. Set aside.
Peel, core, and slice the avocado; form flower petals with the slices around your plate.
Dust the avocado lightly with garlic powder.
When the potatoes are ready, pat dry with paper towel, then cut into fourths. Do not peel them. Potato peelings have a lot of nutrients in them.
Place the potato cubes into the center of the avocado petals on your plate. Cover with about a Tablespoon of softened butter. Then lightly salt the entire plate.
Grate cheese over the buttered potatoes, as much as you like. I used about a quarter cup or a little less.
Top this with the onion & mushroom slices, then the bacon pieces, and the green onion (or chive) slices. Finally, top it all with a good-sized dollop of sour cream.
