Twyla's Homemade Barbecue Sauce

1 small can tomato paste, + 1 – 2 cans water (however thick you like it)
1/2 cup brown sugar
2 T cider vinegar
Dash Worcestershire sauce
1/4 tsp cayenne (or to taste)
2 T Liquid Smoke
Pinch salt (not too much)
2 or 3 rings of an onion, very finely minced

Mix everything together, stirring to completely dissolve the sugar. You may need to heat it a little. Add all of one can (from the tomato paste) of water and add as much or as little of the next can to get the texture and flavor you like. I use about a fourth of the second can. You may also use beer or Jack Daniels instead of the water, but in that case you’ll want to cook off the alcohol if you’re making it for children or folks with health issues. To do this, simply simmer the sauce for about 2 minutes, stirring.

Variations: 1. For Spring Creek Barbecue copycat, add about 2 T of paprika to the mixture. 2. For diabetics, or low-carb version, omit the brown sugar and use about 4 – 6 packets of Sucralose or Stevia, according to how sweet you want it. This is one of the recipes that really tastes as good with the sweeteners as with sugar!
