Melon Salad

Category: Side Salads & Dressings

1 Sugar Baby Watermelon (right size and no seeds so I spend a little more on this one)
1 honeydew melon
1 cantaloupe melon
Maraschino cherries

Wash melons... they can carry cholera and when you cut an unwashed melon you spread any germs or pollutants on the outside to the inside. Scoop out seeds if needed. If using a melon baller or small ice cream scoop, scoop out the meat of the melon until you're down to the rind. Don't let any rind get into your melon balls or you'll have bitter bites in the salad. Do this with all melons. Place the melon balls into a large salad bowl and ad about a cup of maraschino cherries. Serve chilled.

If you don't want to use a melon baller, you can cut the melon into 1-inch cubes or a little larger and mix them in the salad bowl as you would the melon balls. It's no different except you eat squares instead or rounds. Some people put sugar on this. I do not. If the melons are ripe there is no need. Also, you can top with any of the following: a dollop of whipped cream; a dollop of sour cream; a spoonful of cottage or ricotta cheese; yogurt; etc. Top this with a cherry for garnish. Simplicity at its finest!
