Homemade Breakfast Sausage Patties

Serves 4
Serving Size: 2 patties

1 pound ground pork
1 Tablespoon rubbed sage
1 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon salt
1 Tablespoon sugar
pinch cayenne
1/2 teaspoon black pepper (optional)

Preheat a large iron skillet, or other heavy skillet. Mix all ingredients until thoroughly blended. It's best if the pork is at room temperature. Also, don't be afraid to use your hands to mix... just wash before and after. Divide into 8 equal portions, then form into balls first, then flatten to form patties.

I use a little nonstick spray in the skillet to prevent sticking, then fry the patties until at least medium-well. Serve hot with your favorite breakfast foods.

Note: While pork is traditional for breakfast sausage, this recipe works for any ground meat.
