Southern Fried Corn

8 Servings
4 cups frozen corn kernels
1 stick butter (not margarine)
3/4 - 1 cup heavy cream
about 2 or 3 Tbsps. honey
Salt if not using salted butter
Melt the butter until almost or completely melted in a heavy skillet such as cast iron. Add the corn; stir. On med-hi to high heat fry the corn, stirring occasionally until it is thoroughly defrosted. The butter will still be fairly obvious in the pan. Drizzle the honey over the corn; then add the cream. Stir frequently, frying until the cream is absorbed into the corn and it looks a little dark, being slightly browned. Serve hot with other good & fattening southern food!
