Easy Fried Onion Rings

1 large or 2 medium onions, peeled and sliced into rings
1 cup pancake mix (self-rising flour works)
1/2 cup yellow cornmeal
1 cup water
1 teaspoon onion powder
1 teaspoon sugar (or a little more)
Salt for salting after cooking (NOT to be mixed into batter. The pancake mix already has salt in it.)

Mix everything but the salt together in a bowl large enough for dipping, blending thoroughly. Dip the onion slices into the batter, shake very lightly to remove any excess batter, then drop into hot oil and deep fry until brown, turning for even browning. Drain on towels. Sprinkle very lightly with salt. Serve hot with ketchup!

Note: Fry only a few at a time, making sure to leave enough room to turn and stir the rings. This also helps any fried food cook more evenly.

Note: Adding a little vanilla gives these the flavour of a popular drive-in's old fashioned onion rings.
