Curried Chicken Mandarin Orange Salad
Category: Sandwiches
2 cups cooked chicken breast meat, cut into dice-size cubes - all skin and fat removed
1/2 cup chopped red onion
1/2 cup chopped pecans or cashews
1/4 cup chopped celery
1 cup canned Mandarin oranges, drained and rinsed
1/2 cup shredded coconut - fresh or from a bag (sweet is OK)
1 cup mayonnaise or Miracle Whip*
1 Tablespoon curry powder
dash salt
Blend together to mix well. Chill at least 4 hours before serving. Serve as a salad over Chiffonade cut Romaine lettuce, or use as a sandwich filling on cut Croissants or your favorite sandwich bread.
Note: Mayonnaise will add moisture without much altering the flavours of the curry, while Miracle Whip will add a bit of a tang to the overall flavour of the salad, to which you may wish to add also a scant teaspoon of sugar to counter the "zing" of the salad dressing. Either will produce a desirable dressing for this salad.
