Corn Relish

Similar to the ones found in farmers' markets.

2 cans whole corn, drained
1 chopped bell pepper
6 Tbsp cider vinegar
1/2 tsp salt
1 small jar pimento
1 small onion, minced
9 Tbsp sugar
3 Tbsp oil
Pinch black pepper

Mix well and marinade in the fridge overnight. Serve chilled.
