Classic Peanut Butter & Banana Sandwich

Also known as "The Elvis"
First, if you want both sides of your bread toasted, you fry one side only of the bread in about a tablespoon of butter in a heavy pan. An iron skillet works great. Set aside. Then you smash the banana until it’s baby food, then smear the mush on the toasted side of the first bread slice. Then you slather your favorite peanut butter, creamy or chunky on the other bread slice, also using the toasted side if you’ve toasted them.
Place the two sides together taking care to not spill the topping from either side. Return to the skillet with another 2 Tbsps. or so of butter and fry the other side. Remove from skillet; slice and serve warm.
