Black Cherry Jell-O Salad

Ingredients

2 3-oz. packages black cherry flavor Jell-O
3 cups Dr Pepper - I prefer the cane-sweetened (Dublin recipe) but any will do
1 8-oz package cream cheese, at room temperature
1 small jar maraschino cherries, drained and stems removed if needed
1 small can crushed pineapple, drained
Whipped Cream and additional cherries for garnish

Warm 1 cup Dr Pepper in a saucepan, being careful to not boil. When small bubbles begin to appear in the pan, remove from heat and dissolve the gelatin in the hot Dr Pepper. Slowly stir in the remaining Dr Pepper, and then blend in the cream cheese. Be careful you don't mix too quickly or else the Dr Pepper will fizz and you can overflow very easily.

Stir in the cherries and pineapple. Pour into serving bowl or Jell-O mold and set overnight. To serve from serving bowl: spoon Jell-O into dessert bowls and top with a dollop of whipped cream and a cherry. To serve from Jell-O mold: remove from mold. After your magnificent display has been admired, cut individual servings or allow guests to cut their own. Have a small bowl of whipped cream and another small bowl of cherries for diners to top their own Jell-O if they wish.
