Aunt Judy's Mexican Rice Casserole (Vegan Version)

(Similar to the original Minute Rice brand Mexican Rice recipe from the 1960s that Mama used a LOT)!

This recipe makes about 4 main course servings.

1 lb. vegan ground beef flavor crumbles (or use the tube version and break up the soy burger)
1 chopped onion
1 chopped bell pepper
1 cup uncooked white rice
2 Tbsp. oil
2 Tbsp. chili powder
1 tsp. prepared mustard
1 cup water
1 can tomato sauce (15-oz)

Brown the soy beef crumbles, onion, and bell pepper. Drain. Add rice and brown a couple minutes. Add remaining ingredients, cooking on high for 2 or 3 minutes, then reduce heat and simmer about 20 minutes or until the rice is tender. You may need to add a little liquid to prevent this becoming too dry. I stir it very frequently.
