Homemade Banana-Nut Crunch Cereal

4 slices homemade banana bread (Big Mama's Recipe)
You'll need to bake a loaf to get the amount correct.
1/4 cup each of two kinds of chopped nuts; I used Cashews and Pistachios
1/2 cup chopped dried fruits; I used dates, cut smaller than raisins
1/4 cup brown sugar

Cut the banana bread into small pieces, no bigger than 1/3-inch cubes. Place on a baking sheet and bake at 170 degrees until they're crunchy and completely dried through the thickness.

Meanwhile, chop all the nuts and fruits and place in an airtight container. (Just to note, this recipe fills a large order Chinese Soup container that comes with take-out orders from your favorite Chinese restaurant! I think it's a quart.)

Add the brown sugar.

When completely dried and still at least slightly warm, add the banana bread pieces to the mix, place the lid on tightly, and tumble the mix a couple of times to mix. The warmth of the bread will hold onto the brown sugar better and your cereal will be better for it.

Store in your pantry or cupboard as you would any store bought cereal. Tumble the container once before serving to redistribute any ingredients that have fallen to the bottom. Pour into a cereal bowl with enough milk to cover and enjoy. This may also be eaten as a granola.

Notes:

* I've not tried it, but I think broken dried banana chips would be wonderful in this, either as half the fruit, or in addition to the recipe as is.

* Try flaked coconut in addition to the above mix.
