More like a teacake than a sweet sugar cookie, these are the cookies my brother used to ride his bike to our country neighbor's house to enjoy every time the grandmotherly lady made them. This is the recipe our own Granny (my great-grandmother) used to make her cookies she'd cut with a canning jar ring. They're crunchy, and almost like a flat scone more than most sugar cookies, and the older ladies do not frost them or top them with sugar. They're simply the way they are, and they are good.
Mrs. Driggers' Sugar Cookies
2 cups sugar
2 sticks oleo (margarine)*
2 eggs
3 teaspoons baking powder
4 Tbsp. whole milk
1/8 teaspoon salt
1 Tbsp. vanilla
6 to 6.5 cups flour
Mix well. Should be the consistency of Play Dough, and not too dry. Roll out on a floured dough board. Cut into shapes - the old grandmothers used a canning ring or biscuit cutter. Place on cookie sheet. Bake at 350 degrees F for 9 - 10 minutes, or until lightly brown. They'll be darker around the edges. These are intended to be a crunchy cookie, but if you insist on having them softer you can bake for 6 minutes or so. Serve with hot tea or coffee.
