Amy's Fried Sweet Potatoes

My mother-in-law is an east Texas southern girl... calls herself a real hillbilly! Anyway, whatever else y'all can say about hillbillies, if my mother-in-law is any example y'all can say they sure can cook! This is a recipe she taught me, although it isn't really a recipe at all.
Sweet potatoes, peeled, halved, and sliced about 1/4 inch thick or less. (Use about 1 medium or 1/2 large for each serving)
Shortening for frying
Salt & Pepper to taste
First you take a very heavy, large skillet and set it on medium-high heat to preheat. Then place enough shortening to make about 1/2 inch deep. Add enough sweet potatoes to fill but not so much you cannot stir it. Fry, stirring occasionally until slightly browned and crisp on the edges but tender in the center. Remove to a towel-lined bowl to drain, then serve on a separate platter.
Repeat the process until all the potatoes are fried. You can keep the serving dish in a low oven (190 - 200 degrees) until ready to serve.
These go great with catchup or barbecue sauce for dipping.
Serve wherever you would French Fries.
