Enchilada Con Queso

1 lb ground beef
1/2 c. chopped onion
1 16oz can tomatoes
1 tsp salt
1/4 tsp pepper
1 6oz can tomato paste
12 tortillas
1 pkg chili seasoning mix
1/2 c. water
2 c shredded sharp cheddar cheese

Brown meat. Stir in remaining ingredients except cheese and tortillas. Simmer 10 minutes. Place rounded Tbsp of meat sauce and cheese in each tortilla & roll up tightly. Place seam side down in baking dish. Top with remaining sauce. Cover tightly with foil. Bake at 375 for 25 minutes. Sprinkle with remaining cheese and bake for 10 minutes longer. Makes 6-8 servings.
