Zesty Cheese Tortilla Casserole

From Pavilions:
12 corn tortillas
1 c. sour cream
2/3 c. milk
1 egg, beaten
1 tsp salt
3 1/2 c. (14oz) shredded Jack cheese
1 4oz can diced green chilies
1-2 1/2 oz can sliced olives, drained
1/4 c. minced onion
Small pinch of cayenne

Cut tortillas into strips 1” wide. Set aside. Beat together sour cream, milk, egg, salt and cayenne. In 3 qt casserole, layer 1/3 of tortilla strips, 1 c. cheese, 1/3 of chilies, olives and onions, then 1/3 of the sour cream mixture. Repeat layers. Cover and bake at 325 for 30 minutes. Uncover and sprinkle with remaining ½ c. cheese. Return to oven until cheese topping is melted, about 10 minutes. Makes 6 servings.
