3/4 c. elbow macaroni
1 Tbsp butter
2 Tbsp flour
1 16-oz can stewed tomoatoes, cut up
1 8-oz can tomato sauce
1/4 c. water
1/2 envelope onion soup mix (1/4 c.)
1/2 tsp dried oregano, crushed
1/4 tsp salt
Dash pepper
2 c. cubed cooked beef
1/2 c. shredded mozzarella cheese (2oz)
Green pepper rings

Cook macaroni, drain. In saucepan, melt butter, blend in flour. Stir in undrained stewed tomatoes, tomato sauce, water, onion soup mix, oregano, salt & pepper. Cook and stir until thickened and bubbly. Stir in cubed beef & cooked macaroni. Spoon mixture into a 1 1/2 quart casserole. Bake, uncovered, at 350 for 20 minutes. Sprinkle with cheese; top with green pepper rings. Return to oven until cheese melts, about 5 minutes more. Makes 4-5 servings.
