Apple Cake

2 c. sugar
3 c. flour
2 tsp cinnamon
2 tsp soda
1 tsp salt
1 c. oil
2 eggs, well beaten
1 c. chopped nuts
4 c. diced apples

Mix all dry ingredients. Add remaining items. Grease and flour an oblong baking pan. Bake at 325 for 40-60 minutes.

Easy Penuche Icing
1 stick butter
1/4 c. milk
1 c. brown sugar
1 3/4-2 c. powdered sugar

Melt butter in saucepan. Add brown sugar; boil on low heat for 2 minutes, stirring constantly. Add milk; bring to a boil, stirring constantly. Cool to lukewarm. Gradually add powdered sugar. Beat until thick enough to spread on cake.
