Garlic Parmesan Chicken
Category: Recipes
(recipe from St. Andrew the Apostle Parish cookbook submitted by Jennifer Hutchison)
2 Cups dry bread crumbs
1/2 Cup grated Parmesan cheese
1 (3 oz.)can french fried onions
1 Tsp. mustard powder
1/2 Cup butter
4 Large cloves Garlic, chopped
1 Tbsp. Worcestershire sauce
4 boneless chicken breast halves
1. Prepare your chicken by butterflying and tenderizing the breast.
2. Preheat oven to 350 degrees F. Lightly grease (2) 13x9 inch baking dishes.
3. In a shallow dish or bowl combine the bread crumbs, cheese, onions, and mustard powder; set aside.
4. Melt butter in a small saucepan; add garlic and Worcestershire sauce; saute garlic until tender. Remove from heat.
5. Dip chicken in garlic butter mixture, then roll in bread crumb and cheese mixture, coat thoroughly.
6. Place coated mixture into prepared baking dish. Drizzle any remaining garlic butter mixture over chicken breasts.
7. Bake in the preheated oven for 25-35 minutes, or until chicken is no longer pink, and juices run clear.
8. Enjoy!
Tip: I like to enjoy my chicken atop sauteed angel hair pasta with butter and garlic.
