  • 2 pounds cauliflower, trimmed
  • 1/4 cup whipping cream
  • 4 tablespoons unsalted butter, cut in bits
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup cream cheese, softened

Chop the cauliflower, including the core.

Bring a pot of salted water to a boil over medium heat. Add the cauliflower and cook for 30 minutes or until it is very soft. Drain well, pressing out as much water as possible.

Place the drained cauliflower in a food processor. Add the whipping cream and process until the cauliflower is smooth and creamy.

Return the cauliflower puree to the pan over low heat. Add the butter, Parmesan cheese, and cream cheese. Stir until the cheeses melt and the cauliflower mash is smooth. Add salt if desired. Serve hot.
