Huevos Rancheros (ranch-style eggs)

4 corn tortillas
4 large eggs
1/4 cup water
1/4 cup mild salsa
1/4 cup shredded cheese (cheddar or monterey jack)
oil

(Use a covered skillet. First fry the tortillas uncovered.)

To prepare tortillas, heat skillet to 350degrees. Add 1/4 cup oil. Slip in tortillas, one at a time, and fry gently, until small specks appear on the tortillas, and they are limp. Place tortillas on oven-proof plate. Spoon salsa thinly over tortillas, to the edges.

Reduce heat on skillet. Gently crack eggs into skillet. Add 1/4 cup water, and place lid on skillet. Let eggs fry and steam, until whites are set. Gently remove eggs, and place on salsa-covered tortillas. Sprinkle cheese over eggs, to edges.

Place plate under broiler for a couple of minutes, until cheese is melted.

Serve immediately.
