Carmalized Onion Pie Pockets

Ingredients -
1 package ready made pie dough brought to room temperature (in grocery refrigerated section, 2 crusts for 9 inch pie)
1 Vidalia onion, sliced
2 cups shredded cheddar cheese
4 ounces goat cheese
1/4 cup pine nuts, toasted
4 tablespoons butter
1 egg, beaten
1/4 cup chopped parsley for garnish
Preheat oven to 425 degrees
Place butter into large saute' pan on medium heat. Once butter is melted add sliced onions and spread evenly. Cook on medium heat for 25-30 minutes until caramelized (light golden brown, soft, almost transparent and slightly sweeter to the taste).
In a large mixing bowl combine onions, pine nuts, cheddar and goat cheese until blended thoroughly. Set aside.
Roll out pie dough carefully. Spread mixture evenly over dough. Roll starting from one side to the other. Place 1/8 teaspoon of the beaten egg on the inside flip of the pie dough that is exposed so that it sticks. Slice into 1 1/2 inch pinwheels and bake on a greased cookie sheet at 425 degrees for 15 minutes. Flip after 7 minutes. Remove from oven. Garnish with parsley.
Serves 4-5
These are sure to be a hit at any get together and may be served warm or at room temperature.
