Balsamic Onions

Serves/Makes: 2 cups onions

Prep/Cook Time: 2 hours
Ingredients:
1 large red onion
1 large vidalia onion
1 cup Pomegranate (or other flavor) balsamic vinegar
2 t kosher salt
1 t fresh ground pepper
Preparation:
Trim and peel each onion. Cut into 8 pieces each. Put in a oven proof deep sided dish. Pour balsamic vinegar over onions and add salt and pepper.
Cover with foil and put in a 350 degree oven. The vinegar will run off the onions in the beginning. Every 20 minutes remove foil and toss onions. The liquid will increase and the onion volume will decrease as the onions soften. Continue this for the whole 2 hours.
Cooks Notes - I know onions are mainly used as an aromatic, but I love them as a side dish too. When I make these I save about 1 cup of the onions (not the liquid) for my Balsamic Basil Brisket Burgers. Hope you look this recipe up. You won't be dissapointed.
