Aprium Butter/Sauce
Category: Sweet Sauces
Serves/Makes: 1 cup
Difficulty: 2
Prep/Cook Time: 10 minutes
Ingredients:
4 ripe Apriums (combination of a apricot and a plum, new in your produce section) cut into wedges
3 T butter
3 T brown sugar
1 t ground cinnamon
1/2 t freshly grated nutmeg
1 t freshly squeezed lemon juice
pinch of salt
Preparation:
In a medium cast iron or heavy bottom skillet add butter, brown sugar and cinnamon. Over med-low heat, melt and stir to combine.
Place aprium wedges in a single layer on the butter/sugar mixture. Add lemon juice and salt and grate nutmeg over top of fruit.
Cook for about 8 minutes, stirring after 5 minutes.
When done, put into food processor and process until smooth, about 30 seconds. To use as a sauce for ice cream pour over good vanilla bean ice cream while still warm.
If you refrigerate this it thickens and becomes a luxurious butter for breakfast or brunch.
Cooks Notes - When I saw this beautiful light yellow fuzzy fruit I was intrigued. It feels like a peach but is smaller than a plum. It has a surprisingly strong flavored juice. I put it on my ice cream at night and by morning it was thick and velvety and put it on my toast. What is new at your grocer?
