Strawberry Pina Colada

Ingredients:
1/2 pint fresh strawberries (hulled and quartered)
2 T sugar
4 ounces Pina Colada mix (recommend Mr. & Mrs. T)
3/4 cup orange mango tangerine juice (recommend Purity Organic brand) or your favorite citrus juice
3 ounce white rum
2 ounces triple sec
4 chilled martini glasses
crushed ice
Preparation:
In a food processor add strawberries and sugar. Pulse until smooth.
In a pitcher add pureed strawberries, and all other ingredients. Stir well and refrigerate at least 1 hour.
When ready to serve, put about 1/4 cup crushed ice into chilled martini glasses and fill with drink mixture. Float mint sprig on top for garnish.
Cooks Notes - There seems to be a bounty of beautiful strawberries right now. They are not only good for you but brighten up any drink or desert you use them in. I hope you enjoy this take on a Pina Colada and be sure to try my Strawberry Almond Pancakes which can be found on the cdkitchen website.
