Becky's Bourbon Balls

Ingredients:

1 Box vanilla wafer cookies (12 ounce box)
2 1/2 cups finely chopped pecans
1 cup powdered sugar
8 ounces Southern Comfort
3 T light corn syrup

Preparation:

In a food processor process until fine, the entire box of vanilla wafers. Pour in a large mixing bowl. Put 1 1/4 cups of the finely chopped pecans in the food processor and process till ground. Add to ground wafers.

Add the powdered sugar, corn syrup and bourbon to the ground mixture. Combine well.

To make all the balls the same size, use a 1 ounce scooper to scoop the balls onto a parchment lined cookie sheet. Butter palms of hands and gently roll between hands to smooth out. Roll balls in remaining 1 1/4 cups pecans.

Cooks Notes: These are ready to eat as is, but as we all know, they get better with time. Cover cookie sheet with plastic wrap and then foil to refrigerate. To freeze put in a plastic container and set plastic wrap on top of balls, then place lid on tightly. Using Southern Comfort instead of just a plain bourbon really makes a difference. It has a sweetness to it that doesn't hit you over the head with the alcohol taste.
