Hide the Veggie - Hamburgers

Serves/Makes: 4 burgers

Ingredients:

1 1/2 pounds ground sirloin or ground brisket
1 large carrot - rough chopped
2 stalks celery - rough chopped
1 clove garlic - rough chopped
1 small yellow onion - rough chopped
1/2 red bell pepper - rough chopped
2 T good olive oil
pinch of salt

Directions:

Over med-high heat in a medium skillet add olive oil, chopped carrot, celery, garlic and onion. Saute for about 6 minutes or until softenend.

Add all veggie mixture to food processor and process till smooth. Add pinch of salt.

In large bowl break up ground sirloin. With fingers add 1/2 of veggie mixture. Combine well without over working the meat. Add a little more of the mixture at a time to the meat making sure it does not get too wet.

Form patties as usual and grill or cook on stove 4 minutes on each side for medium rare.

Cooks Notes: I wish I would have thought of this years ago as my daughter is not a veggie eater. Hamburger night feels better when you know the veggies are already mixed in. Let me know what you think?
