Green Grilled Cheese

Serves/Makes: depends on size of sandwich

Prep Time: 7 minutes

Ingredients:

1 stick unsalted butter - room temperature
1 cup grated mild cheddar
1 cup grated monteray jack
2 large handfuls fresh washed baby spinach

Directions:

Place butter and both cheese in food processor pulse to combine.

Wash spinach well and dry on kitchen towel removing all the water.

Add spinach to food processor and process till smooth.

When ready to serve, take desired amount and spread on bread of your choice. Grill like you would a normal grilled cheese.

Cooks Notes: I tried this out on a 6 and 8 year old. I cut off the crust first and after it was cooked cut it into triangles. It looked so cute. The mixture stays bright green. I told them it was a Dr. Suess green cheese sandwich. They were old enough to know there was no green cheese but it didn't take a minute to make them curious. When they tried it they loved it and asked their mom why she never bought green cheese. I was thinking that a 2 year old doesn't know better and would be very open to the idea of "green cheese". If you are feeling brave, please try my Pea and Basil Soup. The color again is such a pretty green that it looks appetizing enough to kids to get them to try it. Start small and they may surprise you. Most of all have fun introducing your little ones to new foods. Meal time shouldn't bring tears, just smiles. I would love your comments. Thanks.
