Baked Grapefruit Desert

Preheat oven to 450 degrees F

Ingredients:

2 Grapefruits peeled and sectioned
1/3 c brown sugar
1 vanilla bean split and seeds removed
2 egg whites
1/4 c white sugar
4 scoops good vanilla ice cream
4 ramekins

Directions:

Remove sections of grapefruit over bowl to catch the juice. When done sectioning squeeze remaining grapefruit to get all the juice out.

Take vanilla bean and make a slit down the middle. Open up with fingers and place on flat surface. Take sharp knife and pressing firmly with blade scrape the length of the bean to remove seeds. Put in bowl with grapefruit and juice.

Add brown sugar and toss well. Divide among 4 ramekins.

Beat egg whites till soft peaks. Add white sugar and beat till stiff peaks.

Top each ramekin with a scoop of ice cream. Divide egg whites among the 4 ramekins.

Bake until golden brown, about 8 minutes, checking after 6 minutes.

Cooks Notes: This is a refreshing desert in the middle of a cold winter. It kind of gives you the appearance of a healthy desert while still being sweet and creamy.
